Hashed Brown Zucchini Patties

Instructions

  1. Salt the zucchini, let drain 15 minutes, then squeeze out the moisture. Stir in the eggs, add the onions, cheese and garlic, season to taste, then form into patties.
  2. Sauté the patties in the butter until golden brown, about 4 minutes each side.
  3. Plate and serve.
