Hashed Brown Zucchini Patties
serves 4
Ingredients
- 4 C grated zucchini
- 1 C onion, chopped fine
- 2 eggs, beaten
- 6 T grated Parmesan cheese
- 1 cl garlic, minced
Instructions
- Salt the zucchini, let drain 15 minutes, then squeeze out the moisture. Stir in the eggs, add the onions, cheese and garlic, season to taste, then form into patties.
- Sauté the patties in the butter until golden brown, about 4 minutes each side.
- Plate and serve.
